Salted Maple and Blueberry Icebox Cake

On this new episode of All Things Delicious, I’m sharing a recipe I’ve been sitting on for an entire year. I first made this Salted Maple and Blueberry Icebox Cake last summer. I’d been looking for a no-bake, make-ahead dessert with minimal ingredients I could make on a trip to a remote part of Maine (just a few parameters!) and my friend
, who always knows what to make for dessert, suggested an icebox cake. Genius!I knew I wanted to use blueberries, the state fruit of Maine, and maple syrup, the official state sweetener. (I’m not making that up - it’s a real thing!) I layered homemade blueberry jam, graham crackers, and maple whipped cream into a loaf pan, threw it into the tiny refrigerator at the house where we were staying, and crossed my fingers.
Some recipes take time to figure out, but I knew immediately this was something special. Icebox cakes are a kind of wacky, old-fashioned dessert. Somewhere between a pudding, a trifle, and a tiramisu, they’re rich but somehow still light, and they’re just plain fun to eat. This one, with tart blueberry jam and maple syrup and sweetening the whipped cream, was impossible to stop eating. I felt that way last summer, and I feel that way now with leftover icebox cake calling my name from the fridge!
