Good morning! I’m going to keep this brief - because based on the state of the grocery store shelves last night, time is of the essence for those of us preparing for this weekend’s snow to grab last minute essentials, including fresh mozzarella and basil!

I’m really excited to share this recipe with you today. I've been playing around with the idea of a saucy baked pasta for a while, and had been making this recipe in a 9x13 inch pan. The best part was those crispy, chewy pieces of pasta on top and I thought, how can I get more of these??

A sheet pan turned out to be the perfect solution. The increased surface area means more crispiness…. and one of the most fun dinner presentations of all time! I like to put the pan directly on the table and let everyone dig in. The combination of chewy pasta edges, melty mozzarella, and spicy vodka sauce is just heavenly.

Now that I’ve sheet-pan-ified pasta alla vodka, I’m wondering what other pasta I should try with this method. Pesto? Bolognese? The wheels are turning…..


A couple cooking notes:

This pasta definitely has a kick. If heat isn’t your thing, reduce the crushed red pepper flakes to 1/4 teaspoon.

The pasta is best served right after it’s baked, but you can make the vodka sauce up to 2 days in advance and store it in the fridge for last minute dinner magic!
