It’s Friday and I’m back with the companion recipes to this month’s episode of All Things Delicious! If you haven’t watched yet, check it out here and join me for a visit to Brimfield, New England’s largest antique fair.

This Chickpea and Celery Picnic Salad is an Italian-inspired take on a bean salad. It’s got everything I love in salad - crunchy celery, briny olives, salty shaved Parmesan, and golden raisins for a tiny bit of sweetness. It’s great to make in advance because the ingredients hold up well over time, and the chickpeas just get better and better as they marinate in the dressing.

Of course, this recipe isn’t just for taking on the go. It’s a great one to make early in the week and keep on hand for lunches. It would make a really nice side dish for any number of grilled things, from burgers and dogs to fish or steak, or even a roast chicken if it doesn’t happen to summertime when you’ve made your way to this post!

The other recipe featured in this month’s video is a dead simple tomato-cherry pepper sandwich spread. Made with tomato paste, shallots, and diced cherry peppers in vinegar, its spicy but well-balanced- the perfect condiment for the coppa and fresh mozzarella sandwiches I made for the tailgate.
